Brewing is the process of making beer by steeping a starch source (often cereal grains, the most common of which is barley) in water and then fermenting the sweet liquid with yeast. It can be done by a commercial brewer in a brewery, at home by a homebrewer, or in a community setting. Brewing has been used since the 6th millennium BC, and archaeological evidence reveals that ancient Egypt and Mesopotamia made beer. The brewing sector has been a part of most western economies since the nineteenth century.
Water and a fermentable carbohydrate source, like malted barley, are the two most fundamental elements in beer. Brewer’s yeast is used to ferment beer, while hops are used to flavour it. Millet, sorghum, and cassava are less commonly utilised starch sources. Secondary sources (adjuncts) such as maize (corn), rice, or sugar are occasionally added to cut costs or add a feature, such as adding wheat to help keep the beer’s foamy head. Ground cereal or “grist” is the most frequent starch source; the percentage of starch or cereal materials in a beer recipe is referred to as grist, grain bill, or simply mash ingredients.
Market potential & Strategy
The Indian beer industry is quite significant, with roughly 65 million cases (12 bottles of 650 ml each) produced annually in deregulated markets over the last three years. The average per capita usage is only 0.5 litres. Beer production necessitates a licence from the federal government, which must be ratified by each state. Licensing was banned until 1989 when the central government modified the policy and accepted 460 new project applications. Because of the low and uneconomical capacity of 5,000 kilolitres per annum granted by the government, only a handful was cleared and even fewer have actually come on the ground. However, NRI plans with 100 per cent foreign equity, of which at least 51 per cent must be on a non-repatriable basis, have access to 15,000 kilolitres per annum of capacity. The only companies with a nationwide presence are UB, Mohan Meakins, and Shaw Wallace. While only engaged in the beer business, companies like Associated Breweries have created strong regional brands. The market leader is UB’s Kingfisher, which is followed by Hayward 5000, which has emerged as the second most popular selling brand among the various.
This is the most powerful marketing instrument. Because the Indian government forbids advertising in the liquor industry, they resort to proxy advertising. Products with the same brand name: This is a frequent practice in the liquor market, where companies launch a non-alcoholic product with a similar brand name and heavily promote it. This is used by financially sound players. The UB company established the “Kingfisher” mineral water brand to promote the Kingfisher beer brand. Similarly, Mohan Meakins introduced the “Golden Eagle” mineral water brand to promote the same beer brand. SOM Distilleries has produced “Genius” mineral water to promote “Genius” whisky.
