The jackfruit is unique because it changes completely as it grows. Process Of Jackfruit Processing
Selection and Cleaning:- The process starts by picking the right fruit. For vegetables/meat-substitutes, we use “raw” green jackfruit; for snacks, we use “ripe” yellow jackfruit. The fruits are washed thoroughly in large tanks of water to remove any dirt, mud, or pesticides from the thick outer skin.
2. Oiling and Slicing:- because jackfruit contains a very sticky white sap (latex), the cutting blades and the workers’ hands are coated with a thin layer of vegetable oil. This prevents the “glue” from sticking. The fruit is then sliced into large chunks using sharp stainless-steel knives or mechanical cutters.
3. Removing the Bulbs (Core Separation):- The “heart” or the woody core of the fruit is removed. Then, the edible yellow bulbs are separated from the outer prickly skin and the inner fibers. This is often the most labor-intensive part, but in 2026, many modern plants use mechanical separators to speed this up.
4. De-seeding:- inside every bulb is a large seed. For most products (like chips or canned pieces), the seeds are popped out. These seeds aren’t thrown away; they are collected to be dried and sold separately or ground into high-protein jackfruit seed flour.
5.Frying or Drying:- This is where the product is actually “made”:
For Chips: The bulbs are sliced and vacuum-fried. This uses low heat and pressure to make them crunchy without soaking up too much oil.
For Flour/Slices: The bulbs are placed in a Dehydrator (a large warm oven) until all the moisture is gone.
6. Grading and Packaging. Finally, the products are sorted to remove any broken pieces. They are then packed into Nitrogen-flushed pouches. This replaces the air inside with nitrogen, which keeps the chips crunchy and the flour fresh for over 12 months without needing any chemical preservatives.

The business of processing jackfruit is a huge opportunity because it turns a fruit that usually goes to waste into a high-value “superfood.” Since jackfruit is heavy and messy to cut, most people now prefer buying it in ready-to-use forms like crunchy chips, frozen cubes, or “meat-style” canned pieces.
Globally, jackfruit has become famous as a healthy “vegan meat” because its texture is just like chicken or pork, allowing Indian exporters to sell it at high prices to countries like the US and UK. At the same time, here in India, jackfruit flour has become a massive hit as a healthy addition to daily meals.
